When approaching the potato, it can be easily divided in to two parts. Each of these distict [sic] parts can be divided and characterized by specific properties. The two main properties of the potato are the skin and the "flesh," (which is the starch at the center of the potato.) Texture, color, and taste only begin to scratch the surface of the distictly [sic] unique characteristics that make up each of these areas.
When looking at dividing these two elements of the potato we can begin to look at the unique qualities each one "brings to the table." To start out, it is common knowledge that the potato skin is usually very thin and sometimes flaky , but we can begin to see the real seperating [sic] differences in its chemical and nutritional properties. In the early stages of potato consumption, the skins were often peeled in an attempt to make a healthier meal. However, it was quickly realized that the potato skins have a distictly [sic] seperate [sic] nutritional value. Potato skins have a higher concentration of vitamins and nutrients such as: vitamin c, vitamin b6, copper, managnese [sic], and potassium. Potato skins also contain a variety of phytonutrients which are a natural source of antioxidants that help to prevent cellular deterioration of the body. The chemical compostition [sic] of the potato skin makes it a distinct and seperate [sic] characteristic than the potatoes' "flesh."
As opposed to the potato skin, the center of the potato contains a huge amount of carbohydrates. Another suprising [sic] fact is that the potatoes' center contains a large amount of water. It also contains a vast amount of amino acids which are not found in the skin. The potatoes white starch is very low in saturated fat and extremely high in dietary fiber. This differs from the potat skin which do not contain much fiber at all. More than the mere optical and textural differences, we can see through the chemical compostion [sic] of the potato its two disctictly [sic] seperate [sic] parts.
